Difficulty: Easy

Prep time: 20 mins
Cooking time:
25 mins

Special Equipment: Electric whisk

Soft, gooey and rich these brownies are a delight for afternoon tea or served as part of a dessert! They are also gluten free!

Ingredients:

  • 350g 64% Chocolate
  • 250g Butter
  • 350g Caster sugar
  • 5 Whole eggs
  • 65g Gluten free flour
  • 6g Baking powder
  • 65g Coco powder
  • 150g White Chocolate chips (or roughly chopped white chocolate)

Method:

  1. Pre heat an oven to 180C and line a baking tin (approx 20cm x 20cm) with baking paper.
  2. Place the chocolate & butter in a metal bowl over simmering water until melted.
  3. Whisk the eggs & sugar together with an electric whisk until light and fluffy.
  4. Gently fold the melted chocolate into egg mixture.
  5. Fold in the flour & coco powder until you have a smooth batter. Stir in the white chocolate.
  6. Pour the mixture into the baking tin and cook in the oven for 20- 25 mins. You want the brownie to be ever so slightly under cooked.
  7. Let cool and then cut into pieces. You can then drizzle with some melted white chocolate or dark chocolate.
Bon Appetite!
