Difficulty: Easy
Prep time: 20 mins
Cooking time: 25 mins
Special Equipment: Electric whisk
Soft, gooey and rich these brownies are a delight for afternoon tea or served as part of a dessert! They are also gluten free!

Ingredients:
- 350g 64% Chocolate
- 250g Butter
- 350g Caster sugar
- 5 Whole eggs
- 65g Gluten free flour
- 6g Baking powder
- 65g Coco powder
- 150g White Chocolate chips (or roughly chopped white chocolate)
Method:
- Pre heat an oven to 180C and line a baking tin (approx 20cm x 20cm) with baking paper.
- Place the chocolate & butter in a metal bowl over simmering water until melted.
- Whisk the eggs & sugar together with an electric whisk until light and fluffy.
- Gently fold the melted chocolate into egg mixture.
- Fold in the flour & coco powder until you have a smooth batter. Stir in the white chocolate.
- Pour the mixture into the baking tin and cook in the oven for 20- 25 mins. You want the brownie to be ever so slightly under cooked.
- Let cool and then cut into pieces. You can then drizzle with some melted white chocolate or dark chocolate.
Bon Appetite!
